Ingredients
- Peanut oil (for deep-frying)
- 1 cup all-purpose flour
- 1 tablespoon dry mustard
- 1 teaspoon salt
- 1 teaspoon ground white pepper
- Cayenne pepper (to taste)
- 3 tablespoons Morehouse Yellow Mustard
- 1 cup beer
- 1 lb mild or sweet onions
- Salt and Pepper
Instructions
1. Prepare the oil
- Heat peanut oil in a deep fryer to 375°F
2. Make the batter
- In a shallow dish, whisk together the flour, dry mustard, salt, white pepper, cayenne pepper, Morehouse Yellow Mustard, and beer. Mix until the batter is smooth and well combined.
3. Prep the onions
- Slice onions into ½-inch thick rings
- Separate the rings
4. Batter and fry
- Dip each ring into the batter, letting the excess drip off
- Fry in batches until golden brown on both sides
- Transfer to paper towels to drain
5. Finish and serve
- Sprinkle with salt and pepper
- Serve hot with your favorite dipping sauce
