Mustard has been used for many reasons since as early as 3000 B.C. It’s been referenced in Ancient Greek and Roman writings, as well as the Bible. However, back then, it was used for medicinal purposes as well as in food. Mustard grew in popularity as a favorite condiment in the 20th century and has continued to grow in popularity and evolve.

Mustard Seed Variations

There are three main types of mustard seed that are used in the many different variations of mustard. These three types are:
Yellow (or white) mustard – commonly used in bright yellow mustard. This seed offers the mildest flavor and it slightly larger than its counterparts.

Brown Mustard

Used in Grey Poupon and deli mustards. It is more pungent and typically found in African and Indian cuisines. English Mustard is made by blending these seed with yellow seeds. And Oriental Mustard is made with just the stronger brown mustard seeds making it very hot.

Black Mustard

This mustard is hot and found in whole-grain mustards. It packs the most punch and it relatively expensive due to how difficult it is to harvest.

These slight variations come with a unique flavor for each, but still bring the same strong mustard flavor used in many family favorite recipes.

The flavor often comes with a sense of heat or burning, but that’s only present once they have been turned into mustard spread. The seed, on the other hand, doesn’t necessarily come with the same flavor profile. Why is this the case? Because when the seeds are ground and mixed with liquid it produces that pungent taste. The flavor profile is altered by what it is mixed with which can account for the great variety of mustards available.

Unique Mustard Types

There are so many ways that the traditional mustard flavor has been enhanced and tweaked. The infamous bright yellow mustard is a traditional and conventional BBQ and fridge staple, but mustard types expand far beyond that.
