Morehouse Crab Stuffed Baby Bellas
Ingredients
- 16 oz baby bella mushrooms (about 15–20 small to medium)
- 2 oz cream cheese
- ¼ cup mayonnaise
- ¼ cup + 2 Tbsp Parmesan cheese
- 1 Tbsp Morehouse yellow mustard
- 1 tsp garlic powder
- ¼ tsp paprika
- ¼ tsp red pepper flakes
- 2 tsp lemon juice
- ½ tsp salt
- ¼ tsp black pepper
- 8 oz lump crab meat
- 2 Tbsp chopped parsley
- 2 Tbsp Panko breadcrumbs
Instructions
1. Preheat Oven
Preheat oven to 375°F.
2. Prepare Mushrooms
- Clean mushrooms with a damp paper towel.
- Remove stems by snapping them off or cutting with a knife.
- Place mushroom caps on a parchment-lined baking sheet.
3. Make Filling
- In a medium bowl, combine cream cheese, mayonnaise, ¼ cup Parmesan, mustard, garlic powder, paprika, red pepper flakes, lemon juice, salt, and pepper.
- Gently fold in crab meat and parsley until just combined.
4. Fill Mushrooms
- Fill each mushroom with 1 to 1½ Tbsp of filling.
- In a small bowl, mix 2 Tbsp Parmesan with breadcrumbs.
- Sprinkle about 1 tsp of the topping over each stuffed mushroom.
5. Bake
- Bake for 20 minutes or until tops are golden and crisp.
- Garnish with extra parsley and a light sprinkle of paprika before serving.
