Atomic Tuna Melt

Ingredients

Tuna Salad:

  • 1 tablespoon finely chopped red onion
  • 1 dill pickle spear
  • 1 (5 oz) can tuna (oil- or water-packed)
  • 1/4 cup mayonnaise
  • 1 teaspoon Atomic Horseradish
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • Juice from 1/8 lemon wedge

Sandwiches:

  • 2 tablespoons unsalted butter or mayonnaise
  • 1 large tomato
  • 4 sandwich bread slices (sourdough or rye)
  • 4 slices sharp cheddar cheese

Instructions

1. Make the Tuna Salad

  • Finely chop red onion and pickle.
  • Drain tuna and add to a medium bowl with onion and pickle.
  • Add mayonnaise, Atomic Horseradish, salt, pepper, and lemon juice.
  • Mix with a fork until well combined and tuna is flaked.

2. Assemble the Sandwiches

  • Slice tomato into 1/4-inch rounds.
  • Spread butter or mayonnaise on one side of each bread slice.
  • On two slices (buttered-side down), layer cheddar cheese, tomato slices, and tuna salad.
  • Top with remaining bread slices, buttered-side up.

3. Cook the Sandwiches

  • Heat skillet over medium-low heat.
  • Add sandwiches and cook 3–4 minutes per side, until golden and cheese is melted.
  • Cut in half and serve warm
