Morehouse Pasta Salad

Serving Size: 6-8

Ingredients

  • 1 lb diced ham
  • 8 oz uncooked large elbow pasta
  • 8 oz sharp cheddar cheese, diced
  • ¼ cup chopped green onion
  • 1 green bell pepper, seeded and diced
  • 1 cup diced celery
  • 1 cup frozen peas, thawed
  • 1 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon Morehouse Yellow Mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

1. Cook pasta

  • Boil pasta in salted water according to package instructions.
  • Drain and rinse under cold water.
  • Set aside to cool to room temperature.

2. Combine main ingredients

  • In a large bowl, add ham, pasta, cheese, green onion, bell pepper, celery, and peas.

3. Make dressing

  • In a small bowl, whisk together mayonnaise, lemon juice, vinegar, sugar, mustard, salt, and pepper.

4. Toss salad

  • Pour dressing over pasta mixture and toss until fully coated.
  • Taste and adjust seasoning if needed.

5. Chill and serve

  • Cover and refrigerate for at least 30 minutes before serving.
