Morehouse Pasta Salad
Ingredients
- 1 lb diced ham
- 8 oz uncooked large elbow pasta
- 8 oz sharp cheddar cheese, diced
- ¼ cup chopped green onion
- 1 green bell pepper, seeded and diced
- 1 cup diced celery
- 1 cup frozen peas, thawed
- 1 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1 teaspoon Morehouse Yellow Mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Cook pasta
- Boil pasta in salted water according to package instructions.
- Drain and rinse under cold water.
- Set aside to cool to room temperature.
2. Combine main ingredients

In a large bowl, add ham, pasta, cheese, green onion, bell pepper, celery, and peas.
3. Make dressing

In a small bowl, whisk together mayonnaise, lemon juice, vinegar, sugar, mustard, salt, and pepper.
4. Toss salad
- Pour dressing over pasta mixture and toss until fully coated.
- Taste and adjust seasoning if needed.
5. Chill and serve

Cover and refrigerate for at least 30 minutes before serving.
